It was already many, many years ago, my teacher of music, who was
actually the avangardest jazz musician, recomended me to read
Arnold Shoenberg's book on harmonical theory.
Off course, Shoenberg is a classical composer and the book is not
talkin about Jazz Harmony, but explain from Greek Church harmony
to 20th century, how the harmony is expanded, or, how music history
of humans are involving natural overtones in music.
After reading it, I knew everything about jazz harmony is a way of
applicating late 19th to early 20th harmony theory of classical
music.
So, I don't say this is 'the ultimate one', but just recomend you
to read it through if you can find it.
