Another sound I have heard and used for years is this "altered" dominant sound:

G7: G Ab Bb Cb D Eb F G

One note different than traditional altered scale. It has natural 5th.
Technical note: this scale is the 3rd mode of Eb major with a flatted 6th.

So for E7 you could use the 3rd mode of C major b6: E F G Ab(G#) B C D E

Another choice I have heard and use is a six note scale omitting the 5th or b5.

G7: G Ab Bb Cb _ Eb F G

This scale does not commit to being a altered scale or 3rd mode of Eb major.
