There is an analysis of Giant Steps harmony in the book
Coltrane, A Players Guide To His Harmony
by Walt Weiskopf & Ramon Ricker

I got it from Jamey Abersold. Its probably still be available through them.
The intent of the book is to teach players to apply Coltrane's harmonic
techniques to embellish the basic 2-5-1 progression. It covers more JC tunes
in addition to Giant Steps. I just pulled the book of the shelf (its by my
elbow here) its shorter than I remembered - about 47 pages. It is very clear
and well worth the time invested.
